3. Mix in crushed tomatoes, oregano leaves, parsley and cayenne pepper. Stir together. Add in parmesan cheese. Turn the heat to low and simmer the sauce for about 30 minutes.
4. As the marinara sauce is being cooked. Prepare the zucchini wedges.
5. In a mixing bowl, place all-purpose flour and season with salt and pepper.
6. Place beaten eggs in a separate bowl.
7. Coat zucchini wedges first in seasoned flour and then beaten eggs.
8. Preheat your Air Fryer to 390 F (180 C).
9. Arrange coated zucchini wedges in cooking basket without them being too crowded. Spray lightly with oil.
