1. Place all the ingredients for the sauce in a blender or food processor until smooth. Transfer into a small bowl and cover with plastic wrap. Place in refrigerator until ready to use.
2. In a separate bowl, mix the spices well and set aside.
3. Cut the potatoes into 1-inch cubes.
4. Boil the water and add potatoes, cumin, paprika, and bay leaf. Season to taste with salt. Cover with lid and cook on high for 10 minutes.
5. Turn off the heat, drain and discard the water.
6. Transfer potatoes into the Air Fryer basket. Set it to 400 F (200 C) and cook for 15 minutes or until golden brown.
7. Place in a bowl, sprinkle with spices and toss to coat.
8. Transfer into a serving dish and pour the prepared sauce over it.
